Blueberry & Lavender Lemon Energy Balls

An easy, energy-filled snack that's bursting with blueberry & lavender.

Ingredients

  • 1 cup rolled oats
  • ½ cup ground flaxseed
  • ½ cup creamy almond butter
  • ¼ cup honey
  • 1 tsp. lemon zest
  • ½ cup Blueberry & Lavender Golden Raisins

Directions

  • In a bowl, add oats, flaxseed, almond butter, honey, lemon zest and raisins. Stir until combined. Roll into 1-inch balls.
  • Serve energy balls.
  • Refrigerate leftovers.
Blueberry and Lavender Parfait

Blueberry & Lavender Yogurt Parfait

Mix things up with this creamy and crunchy blend of berries, raisins and yogurt.

Ingredients

  • 3 cups vanilla or plain Greek yogurt
  • 1 cup granola
  • 2 cups assorted berries (blueberries, blackberries, raspberries and/or strawberries)
  • 1 cup Sun-Maid Blueberry & Lavender Golden Raisins

Directions

  • Wash and dry the fruit, removing stems and leaves. If using strawberries, cut them into bite-size pieces. Mix fruit and raisins together in a bowl.
  • Layer ¼ cup yogurt into the bottom of 4 parfait glasses or small bowls. Alternate layers of fruit, granola and then yogurt. Repeat layers 2 more times, finishing with the granola and fruit on top.
  • Refrigerate leftovers.
Blueberry and Lavender Cheesecake Trifle

Blueberry & Lavender Cheesecake Trifle

Treat yourself to a light and luscious dessert with a hint of blueberry & lavender.

Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tsp lemon juice
  • 1 tsp vanilla extract
  • Grated zest from 1 lemon
  • 1 cup heavy whipping cream
  • 1 angel food cake, cubed into 1" pieces (homemade or store-bought)
  • 2 pints fresh blueberries
  • 1 cup Sun-Maid Blueberry & Lavender Golden Raisins

Directions

  • Using a mixer, whip the cream cheese until smooth. Mix in the powdered sugar, vanilla, lemon juice and lemon zest until well combined, scraping down the sides of the bowl as needed.
  • Add in the heavy cream and continue mixing on medium speed until soft peaks form. Set aside.
  • Start by layering half of the angel food cake in a large trifle dish, then layer half of the cheesecake filling on top, then top with half of the blueberries and raisins.
  • Layer the other half of the angel food cake on top of the blueberries followed by the other half of the cheesecake filling, then top with remaining blueberries and raisins.
  • Cover tightly and refrigerate until ready to serve.
